<p style="text-align: left;">When I&#8217;m working on fancy cupcakes like these&#8230;</p>
<p style="text-align: left;">I DO NOT LET MY KIDS HELP!</p>
<p style="text-align: left;">I know&#8230; I feel guilty about it. But&#8230; that&#8217;s just the way it has to be sometimes.</p>
<p style="text-align: left;">I&#8217;m feeling a lot less guilty since I did this&#8230;</p>

<h1 style="text-align: center;">Kid&#8217;s Cupcake Day!!!</h1>
<p>I set up a table outside on the lawn.</p>
<p>I pulled out extra sprinkles I had in the cupboards, edible markers, mini marshmallows, mini M&amp;Ms, and whatever else I could find that they would enjoy decorating with.</p>

<p>I baked 12 cupcakes and poured the rest of the batter out on a cookie sheet so they could use cookie cutters to make shaped mini cakes.</p>
<p>I used a box mix that I had sitting around.</p>

<p style="text-align: left;">They made the little cut out shapes and then ate them before I could catch any pictures of them. This is the only record I have of them making the mini cakes. They were a hit.</p>

<p style="text-align: left;">I also gave them three bags of frosting to decorate with&#8230; lemon, strawberry, and vanilla.</p>

<p style="text-align: left;">And this is how you leave a four year old and an eight year unattended while decorating cupcakes&#8230; you set them up at a table OUTSIDE, and you give them frosting bags tightly closed off with twisty ties.</p>
<p style="text-align: left;">If you don&#8217;t use the twisty ties, and you put bags of frosting into the hands of minors, all of the frosting ends up squirting out the back end of the bags. I promise. Please&#8230; for everyone&#8217;s sanity&#8230; use the twisty ties.</p>
<p style="text-align: left;">If you remember nothing else from this post&#8230; remember &#8220;outside&#8221; and remember &#8220;twisty ties.&#8221;</p>

<p style="text-align: left;">Create.</p>
<p style="text-align: left;">I&#8217;ll sit over here, enjoy the sun, drink my iced tea, and snap pictures.</p>
<p style="text-align: left;">No pointers.</p>
<p style="text-align: left;">No tips.</p>
<p style="text-align: left;">No comments from the peanut gallery.</p>
<p style="text-align: left;">Not today.</p>

<p style="text-align: left;">And it turned out to be a magical and marvelous day for all of us.</p>
<p style="text-align: left;">I&#8217;m definitely going to do this more often.</p>
<p style="text-align: left;">For me, it&#8217;s much easier to set them up to do their own cupcakes on a day when I can just sit back and enjoy the fun they&#8217;re having.</p>
<p>Things don&#8217;t go this delightfully on a day when I let them bake, but I also need to get something baked and decorated for an event.  That is when catastrophe can happen.</p>
<p style="text-align: left;">Next time they CAN&#8217;T bake with me, I&#8217;ll promise them their own baking day soon.</p>

<p style="text-align: left;">There are some of those little mini cakes they cut out and decorated. Right there in the middle. They&#8217;re a bit hard to see, but that part was really fun for them! They loved using the cookie cutters and decorating the shapes.</p>

<p style="text-align: left; ">The Fourth of July is such an important day to commemorate. I love honoring America&#8217;s adoption of the Declaration of Independence by being mindful of the tremendous Freedoms we enjoy as Americans, and celebrating those Freedoms with  Family, Food, Fireworks, and Fun.</p>

<p style="text-align: left; ">When I think of a Patriotic treat that represents America, I think of Pie. More specifically&#8230; Apple Pie.</p>
<p style="text-align: left; ">But this Mommy doesn&#8217;t do pies. I&#8217;ve tried. It&#8217;s tough. It takes a lot of counter space to roll out the dough, and I don&#8217;t have a lot of counter space. So for now I&#8217;m stickin&#8217; to my cupcakes.</p>
<p style="text-align: left; ">But trust me&#8230; these Cupcakes are, &#8220;<em>as American as Apple Pie!&#8221;</em></p>

<p style="text-align: left; ">I used apples, peaches, and raspberries in mine because those are my family&#8217;s favorite kinds of pies, but you could use whatever fruits your family loves best. Cherries and Blueberries would be lovely too, and so Patriotic.</p>

<p style="text-align: left; ">I used a Butter Pecan box mix.</p>
<p style="text-align: left; ">I&#8217;ve made cupcakes from scratch and eaten cupcakes from scratch and they can be delicious, but I&#8217;ve also never had a boxed cake mix that I didn&#8217;t like.</p>
<p style="text-align: left; ">This Butter Pecan flavor is perfect for these mini pies, both in taste and color.</p>
<p style="text-align: center;">

<p style="text-align: left; ">I used canned pie filling for my Peach, and Apple Pie Cupcakes, but for the Raspberry Pie Cupcakes I used Fresh Raspberries lightly covered in store bought Strawberry Glaze.</p>

<p style="text-align: left; ">My family <em>LOVES</em> fresh raspberries!!! I make Raspberry Tarts all the time.</p>

<p style="text-align: left; ">In order to make these Fruit Pie Cupcakes, you&#8217;ll need to leave plenty of room in your cupcake papers for the fruit to lay on top of the cake and still be held within the paper. When pouring the batter into the cups don&#8217;t fill them more than 1/2 way. Somewhere between 1/4 and 1/2 full is just about perfect. And, if you do have some cupcakes that puff up too high to fill with fruit, never fear&#8230; once they&#8217;re baked just use a knife to gently cut the cupcake down enough so the fruit will fit. No one will ever see the part you cut hidden under all that fruit.</p>

<p style="text-align: left; ">Next, cover the top of the cupcake with your favorite fruits. For Raspberries, Blueberries, and Cherries, they look beautiful if you place them one by one with your fingers, but for the canned Peaches and Apple slices, you can dice them up and spoon them on.</p>

<p style="text-align: left; ">Once you get all your fruit on, you&#8217;ll be tempted to stop right there. And&#8230; of course, you could. These Fruit topped cupcakes are beautiful and delicious just like this.</p>

<p style="text-align: left; ">But if you want to take it a step further and create a little American Country Creation that will thrill your guests, give this extra step of turning Fruit topped Cupcakes into little Mock Pies, a try.</p>

<p style="text-align: left; ">The Pie Hatch and Crust design is created by piping on Frosting. I chose a delicious mixture of Butter Cream and Caramel frosting to get a great taste and a Pie Crust color.</p>

<p style="text-align: left; ">One or two tablespoons of Caramel Frosting mixed into a full tub of Buttercream will give just the right shade for a Mock Pie Crust.</p>

<p style="text-align: left; ">If you seen any of my other Cupcake recipes, I often just use a plain old Ziploc bag as my piping tool, but in order to get a flat appearance for the Hatch work on the top of the pie you really are going to want to use a piping bag and a flat tip.</p>

<p style="text-align: center;">
<p style="text-align: left; ">Here are some examples of Wilton Tips that would be appropriate for this project. Personally I prefer a small smooth flat tip like #44 above, to create the look of a pie. The ribbed edge tips are more for creating the look of a basket weave, although if you already have a ribbed tip, you can turn it upside down so that the smooth edge is on top to get the same effect as a smooth flat tip. Tip #46 above demonstrates this.</p>

<p style="text-align: left; ">When you place your berries in one by one, you&#8217;ll end up with some gaps in between them. You should fill those holes in with cut or torn pieces of berries so that you have a nice full dome shape for your hatching to rest on.</p>

<p style="text-align: left; ">Don&#8217;t start your first line on the middle of the cupcake because it can throw off the spacing of your lines. Using your piping bag and tip, lay your first line just off of one of the sides.</p>

<p style="text-align: left; ">Lay all of your lines across the top, from one side to the other. I was able each time to fit three or four lines across in each direction, depending on the spacing. I think the cupcakes with four lines going each way came out the best.</p>

<p style="text-align: left; ">Rotate your cupcake and begin piping lines horizontal to the ones you&#8217;ve already done.</p>

<p style="text-align: left; ">Don&#8217;t worry about how the ends of your lines look because they will be completely covered up by the Mock Pie Crust you&#8217;ll do next. Just make sure each end of every line touches the cupcake paper, but doesn&#8217;t droop or flop out beyond it.</p>
<p style="text-align: left; ">If you do have some frosting that accidentally drips down the cupcake paper, use a lightly damp paper towel to wipe it off. No harm, no foul. It will dry in seconds and no one will ever know.</p>
<p style="text-align: left; ">Your Hatch Top is done as simple as that!</p>
<p style="text-align: left; ">You&#8217;ll be so proud of yourself at this point, and you should be&#8230; You&#8217;re almost done!</p>

<p style="text-align: left; ">Using the same piping bag and tip, create your Pie Crust by working in sections. Don&#8217;t try to pipe all the way around the cupcake without taking a break.</p>
<p style="text-align: left; ">Using an up and down folding pattern, pipe the area directly in front of you. Stop piping, rotate the cupcake, and pick up where you left off using the same up and down folding motion. Each cupcake will be divided into about six small sections like this.</p>
<p style="text-align: left; ">I highly recommend taking the time after you finish decorating each cupcake, to immediately place it on a cookie sheet in the refrigerator in order to help the shape of the Buttercream on top of the fruit and glaze to set in it&#8217;s place. Leaving the cupcake out while you decorate all of the others, may cause some the frosting to begin drooping and coming apart.</p>
<p style="text-align: left; ">And <em>please</em> don&#8217;t give up if your first try at this is a mess. Mine was. Just pick out a couple of cupcakes that didn&#8217;t turn out so well in the baking process and without even bothering to put any fruit on them, use them to practice the piping techniques. Or, if you can&#8217;t waste any of the 24 cupcakes you baked, practice the piping technique on the dome of an orange or a rubber ball. (Better buy an extra tub of Buttercream for this just in case) When you&#8217;ve got it down, move on to your lovely Fruit Topped Cupcakes and turn those little tarts into Pies!!!</p>

<p>Prep and Decorating Time: 1 hour 30 min</p>
<h3><em>Ingredients</em></h3>
<p>- 1 Box Butter Pecan Cake Mix by Betty <span><span>Crocker</span></span></p>
<p>- 3 eggs</p>
<p>- 1/3 cup Vegetable or Olive Oil</p>
<p>- 1 and 1/4 cups of water</p>
<p>- 1 Tub <span><span>Buttercream</span></span> Frosting by Betty <span><span>Crocker (You may want to buy an extra tub to have on hand just in case)</span></span></p>
<p>- 1 Tub Caramel Frosting by Betty <span><span>Crocker (You&#8217;ll only be using a few tbsp of this so 1 Tub is plenty)</span></span></p>
<p>- 4 small clam shells of Fresh Raspberries</p>
<p>- 1 Tub Strawberry Glaze (found in produce section near strawberries)</p>
<p>- 1 Can Apple Pie Filling</p>
<p>- 1 Can Peach Pie Filling</p>
<h3><em>Tools and Accessories</em></h3>
<p><em>- </em>12 Red Cupcake Papers</p>
<p>- 12 Blue Cupcake Papers</p>
<p>- 2 Cupcake Pans, 12 individual Cupcake molds in each</p>
<p>- 1 Flat Piping Tip (Recommended Wilton&#8217;s Tip #44 or something similar in shape)</p>
<p>- 1 Piping Bag</p>
<p>- 1 Coupler (White plastic piece used to attach medal tip to Piping Bag)</p>
<p>- Cupcake rack or platter to display Finished Cupcakes</p>
<h3><em>Directions</em></h3>
<p>1. Set oven to 350 degrees</p>
<p>2. Combine Butter Pecan Cake Mix, Eggs, Water, and Oil in Mixer according to directions on cake box</p>
<p>3. Fill Cupcake Pans with Red and Blue Cupcake Papers</p>
<p>4. Fill each Cupcake Paper between 1/4 and 1/2 of the way up with Butter Pecan Cake Batter</p>
<p>5. Bake in oven at 350 degrees for approximately 13 minutes &#8211; verify cooking instructions on back of cake mix box, but remember you are creating more shallow cupcakes than is typical in order to leave room for the fruit &#8211; these cupcake will bake more quickly than what the box suggests</p>
<p>6. Test cupcakes by inserting toothpick into the center of one cake in each pan &#8211; if the toothpick comes out clean the cupcakes are done</p>
<p>7. Allow cupcakes to cool completely</p>
<p>8. Gently wash all raspberries and mix them in a large bowl with 3 tbsp of Strawberry Glaze</p>
<p>9. Open cans of Apple and Peach Pie Filling and cut fruit slices into small squares placing Peaches in one bowl and Apples in another &#8211; discard excess glaze in cans</p>
<p>11. Place Raspberries onto desired number of cupcakes making sure to fill all gaps and create a dome shape</p>
<p>12. Spoon diced Apples and Peaches onto desired number of Cupcakes making sure to fill all gaps and create a dome shape</p>
<p>13. Mix 1 Tub of <span><span>Buttercream</span></span> Frosting <span><span>wi</span></span>th 2 tbsp Caramel Frosting until well blended</p>
<p>14. Prepare piping bag with flat tip attachment and fold bag inside out half way filling bag with frosting mixture &#8211; twist bag closed squeezing frosting toward tip</p>
<p>15. Pipe hatch across top of fruit on Cupcake making sure both ends of each strip meet the cupcake paper</p>
<p>16. Using an up and down motion squiggle Mock Pie crust around cupcake in sections taking breaks to turn cupcake as needed in order to reach next section</p>
<p>17. Place each cupcake in fridge to chill immediately after piping on Hatch and Crust in order to set the shape of the frosting and avoid melting</p>
<p>18. If your frosting seems to be coming out of piping bag to quickly or wont hold shape place entire piping bag in the fridge for 5 minutes to chill</p>
<p>19. Cupcakes should be kept in fridge until ready to serve in order to ensure the best shape and appearance</p>

<p style="text-align: left; ">What could be better than some Strawberry Lemonade Cupcakes?</p>
<p style="text-align: left; ">Nothing, that&#8217;s what!</p>
<p style="text-align: left; ">So let&#8217;s get to it&#8230;</p>

<p style="text-align: left; ">First I whipped up a store-bought Strawberry cake mix and a store-bought Lemon cake mix and put them both in Ziploc Bags.</p>

<p style="text-align: left; ">Next I cut off a small corner of each bag and pipped a mixture of both batters into each cupcake paper. I baked them according to the box directions.</p>

<p style="text-align: left; ">I actually sprinkled the mix onto the frosting and then sprinkled the cupcakes again once the strawberries were on top.</p>
<p style="text-align: left; ">Tip: to get this fancy little strawberry look, just cut the strawberry into slices leaving each slice attached at the stem and then fan the strawberry out on top of the cupcake.</p>

<p style="text-align: left; ">For the Lego part, I bought Lego candy from the mall candy store, and stuck the pieces on store bought cupcakes.</p>

<p style="text-align: left; ">Now when it comes to layered cakes&#8230; that&#8217;s another story. I&#8217;m not there yet due to lack of counter space&#8230; and patience.</p>
<p style="text-align: left; ">The cake itself was an Albertson&#8217;s signature cake that I ordered. It was supposed to be a Dora Magical Mountain cake or something like that, but it totally reminded me of the worlds in Mario Galaxy.</p>
<p style="text-align: left; ">So&#8230; I ordered it, and asked the decorators to leave off the characters.</p>

<p style="text-align: left; ">Then at home I found Mario characters on Google Images and printed them, pasted them to cardstock, cut them out, taped them to toothpicks, and stuck them in the cake.</p>
<p style="text-align: left; ">I also piped some frosting eyes on the star shaped candles, to make them look like stars from the Mario games.</p>
<p style="text-align: left; ">Now looking at this picture, I realize the only star I got right with the eyes, was the top one. Ooops! Oh well&#8230; no one noticed at the time.</p>
<p style="text-align: left; ">It was good enough for a little boy&#8217;s birthday party.</p>

<p style="text-align: left;">For the Mario Galaxy party I did for my son, not only did I improvise on the cake, but I also improvised with the party ware.</p>
<p style="text-align: left;">I found that great party hat at my local party store, and once again using Google Images I printed a Mario pic, cut him out, and glued him on.</p>
<p style="text-align: left;">And for the plate&#8230; I&#8217;m getting to that.</p>

She created an incredible custom Little Red Riding Hood Party for her daughter, complete with custom costumes, pinata, decorations, desserts, guest book, A Walk to Grandmother&#8217;s house game, and more. You name it, she made it. You&#8217;ve got to go read about the details and see all of her pictures. I just LOVE this idea, and she told me her daughter is already asking for a Goldilocks and the Three Bears party for next year. I can&#8217;t wait to see what brilliant things she comes up with for that one.</p>

There were all kinds of things available online, but they all needed to be shipped from Sweden or Japan where Miffy is much more popular, and I couldn&#8217;t stand to put money out for the crazy shipping costs.</p>

<p style="text-align: left; ">Once again&#8230; I improvised.</p>
<p style="text-align: left; ">And here&#8217;s how you can too!</p>

<p style="text-align: left; ">You can go so far beyond kids birthday parties with this, using personal photos to celebrate family reunions, sweet 16 parties, Anniversary plates made from a wedding photo, hilarious pictures of friends or relatives, birth announcements for baby showers, &#8230; sky&#8217;s the limit!</p>

<p style="text-align: left; ">Use a clear cake plate so you can see your image through it, and determine exactly where you want to place it on your image.</p>

<p style="text-align: left; ">Using a pen, marker, pencil, crayon&#8230; whatever&#8230; trace the plate to create the circular image.</p>

<p style="text-align: left; ">Cut out the circle, and then using a glue stick on the backside of the paper, give the image a light coating of glue, making sure to put glue particularly all the way around the edge. Then stick it to the center of one of the colored plates.</p>

<p style="text-align: left; ">When I think of Valentine&#8217;s Day treats I immediately think of Conversation Hearts candies.</p>
<p style="text-align: left; ">I love those little things.</p>
<p style="text-align: left; ">I can remember as an eight year old girl sitting in my bedroom the night before Valentine&#8217;s Day, putting together my homemade Valentines to hand out at school the next day. I took great care to select each candy heart that would go inside the valentines making sure the right messages went to the right people.</p>
<p style="text-align: left; ">To this day whenever February rolls around I can&#8217;t help but grab a box or two of the candy hearts while checking out at the grocery store.</p>
<p style="text-align: left; ">So&#8230; naturally these little candy hearts were the obvious inspiration for my Valentine&#8217;s Day cupcake design.</p>
<p style="text-align: left; ">I even got inspired to use my favorite Valentine Candies as an inspiration to make some tasty <a title="Brownie Pops" href="http://www.mommytopics.com/food/brownie-pops" target="_blank"><strong><span style="color: #ff00ff;">Brownie Pops</span></strong></a> you can see <a title="Brownie Pops" href="http://www.mommytopics.com/food/brownie-pops" target="_blank"><strong><span style="color: #ff00ff;">here</span></strong></a>.</p>

<p style="text-align: left; ">I started with a basic boxed brownie mix and spread it out about 1/3 inch thick on wax paper, laid on a cookie sheet.</p>
<p style="text-align: left; ">There wasn&#8217;t enough mix to fill the whole cookie sheet, but the batter was so gooey that I was able to spread it with a spoon to the desired thickness and it stayed in place.</p>
<p style="text-align: left; ">I baked it at 350 degrees for 12 minutes until a toothpick came out clean.</p>

<p style="text-align: left; ">After the brownie sheet was baked and cooled I placed the whole tray in the fridge for an hour to allow the brownie to firm up.</p>
<p style="text-align: left; ">Next I used a small heart shaped cookie cutter to make my hearts.</p>
<p style="text-align: left; ">I dipped the cookie cutter in powdered sugar to keep the brownies from sticking to it.</p>
<p style="text-align: left; ">Again, after all the brownies were cut, I placed them back into the fridge to firm up again.</p>

<p style="text-align: left; ">These melting candies can be found at most craft stores or baking supply stores. They come in all kinds of fantastic colors.</p>

<p>After microwaving the candies in a coffee cup for about a minute and stirring it until smooth, I placed a brownie on a fork over the cup, and began using a spoon to scoop the melted candy over it until it was covered.</p>

<p style="text-align: left; ">I prefer the look of the marker over piped candy or frosting because the effect of the marker better mimics the look of the stamped Conversation Hearts Candies.</p>

<p>Champagne Cupcakes just sounded like the right thing to do for New Years. But this coming New Year&#8217;s Eve happens to be particularly special to me and the details pertaining to that fact are what drove me to create this Almond Champagne Cupcake recipe.</p>
<p>This coming New Year&#8217;s Eve will mark the ten year anniversary of the very first date my husband and I ever went on together.</p>
<p>The early morning hours of this coming New Year&#8217;s day will be the ten year anniversary of our very first kiss.</p>
<p>And this coming summer of 2010 will be the celebration of our ten year wedding anniversary.</p>
<p>Our wedding took place in the Wine Country of the Temecula Valley, at the <strong><a title="Wilson Creek Winery" href="http://www.wilsoncreekwinery.com/" target="_blank">Wilson Creek Winery</a></strong>. Their signature Champagne which they are well known for is an Almond Champagne.</p>
<p>Now funny enough, my husband and I don&#8217;t drink alcohol at all, but I do often cook with wine and this time I decided to try making an elegant dessert with Champagne. If you want to serve a non-alcoholic version of these cupcakes for your family, or for the kids, just substitute the Champagne in the recipe with Sparkling Apple Cider.</p>
<p>Champagne in cupcakes just sounded so festive for New Years and using Wilson Creek Almond Champagne was the perfect nostalgic ingredient to represent the place where my beloved and I said our vows.</p>
<p>I hope this recipe can also make some of your coming celebrations extra special.</p>

<p>Start by combining brown and white sugars with butter and almond paste in a stand mixer bowl. Whip until light and fluffy, about 3 to 5 minutes.</p>

<p>This is almond paste. It can be found in some grocery store baking aisles and most cake supply stores.</p>

<p>In a separate bowl hand whisk together, eggs, milk, baking soda, and Vanilla.</p>

<p>It&#8217;s convenient to transfer this mixture into a container with an easy pour spout.</p>

<p>In a third bowl sift together flour, spices, and salt.</p>

<p>Now with all three bowls prepared it&#8217;s time to combine them into one delicious Almond Cupcake Batter.</p>

<p style="text-align: left;">Alternating between the egg mixture and flour mixture continue adding both to the sugar, butter mixture until all your ingredients are together in one bowl.</p>

<p style="text-align: left;">Mix on medium only until all ingredients are combined. Do not over mix.</p>

<p style="text-align: left;">You will end up with a light colored batter, speckled with spices, that smells like sweet Almonds.</p>

<p style="text-align: left;">To create clean, perfect Cupcakes, fill a Ziploc bag with your Cupcake Batter, cut off the tip of one corner, and pipe the batter into your Cupcake Papers 2/3 of the way.</p>
<p style="text-align: left;">Bake 15 to 20 minutes until a toothpick comes out clean.</p>
<p style="text-align: left;">Remove your cupcakes from the tins. While they cool there is plenty more to do!</p>

<p style="text-align: left;">On to making the Almond Champagne Buttercreme.</p>
<p style="text-align: left;">Now I know what you&#8217;re thinking&#8230; Marshmallow Fluff? What in the world is that for?</p>
<p style="text-align: left;">The Marshmallow Fluff is what allows us to have a thick buttercreme that can hold a fancy shape on top of our cupcakes, even though we will be adding a full cup of liquid in the form of Champagne to our frosting.</p>
<p style="text-align: left;">So here we go.</p>
<p style="text-align: center; "><img class="aligncenter" title="Marshmallow in Bowl" src="http://farm5.static.flickr.com/4012/4219138645_efd3c96727_o.jpg" alt="" width="500" height="334" /></p>
<p style="text-align: left;">Empty entire contents of two jars of Marshmallow Fluff into your mixing bowl and begin whipping. The fluff should begin to soften and smooth making it easier to combine with other ingredients.</p>

<p style="text-align: left;">Slice 5 sticks of room temperature, unsalted, butter, into tablespoon size slices.</p>
<p style="text-align: left;">If you&#8217;re like me, you might often use &#8220;salted&#8221; butter because it&#8217;s just what you always have on hand, even in recipes that call for &#8220;unsalted.&#8221; THAT WILL NOT WORK IN THIS FROSTING.</p>
<p style="text-align: left;">You MUST USE UNSALTED BUTTER or your frosting will taste like a you are biting into a raw stick of butter on top of your cupcakes. Trust me&#8230; in this recipe it makes all the difference in the world!</p>

<p style="text-align: left;">Pop open a new bottle of Wilson Creek Almond Champagne and measure 1 cup.</p>
<p style="text-align: left;">Add Champagne to Marshmallow Fluff and begin mixing the two together. After 2 minutes, stop the mixer and scrape the sides of the bowl to retrieve all of the marshmallow fluff stuck to the sides. Then, begin mixing again and continue until the marshmallow and Champagne are completely combined.</p>

<p style="text-align: left;">Begin adding slices of butter a couple at a time while the mixer is on a medium speed. Allow each addition to completely combine before adding the next.</p>

<p style="text-align: left;">Once all the butter has been combined into the frosting, add 1 tsp of Vanilla.</p>

<p style="text-align: left;">Next add Powdered Confectioners Sugar to your mixture, 1/2 cup at a time. Mix on medium speed until well combined.</p>
<p style="text-align: left;">And that&#8217;s it&#8230; your Almond Champagne Buttercreme is ready.</p>
<p style="text-align: left;">Make sure your cupcakes are completely cool before frosting them or you will have a sad, melted mess.</p>

<p style="text-align: left;">Using a butter knife, spread a thin layer of frosting on each cupcake.</p>

<p>Choosing well shaped Almond slices, place each piece of Almond into buttercreme on edge of the cupcake, in a single row, creating a flower petal appearance all the way around each cupcake.</p>

<p style="text-align: left;">Most of the time when I make cupcakes I just apply my frosting with a simple make shift piping bag made from a Ziploc.</p>
<p style="text-align: left;">For this special occasion however, and for this fancy of a cupcake, I suggest actually using a real piping tip with a special star or flower shaped cut, to finish off your Almond Champagne Cupcakes with an elegant design.</p>

<p style="text-align: left;">Pipe the frosting in a swirl and sprinkle on clear decorating sugar.</p>
<p style="text-align: left;">Beautiful!</p>
<p style="text-align: left;">The combination of the sprinkles and the color of the frosting looks just like bubbles in Champagne.</p>
<p style="text-align: left;">I just love it.</p>
<p style="text-align: left;">I made my first few cupcakes just like this because it looks so beautiful, but after eating one, I decided to continue piping the rest with only 1/3 of the frosting you see in the picture.</p>
<p style="text-align: left;">Just one spiral around and into the middle so that the cupcake top is covered, is plenty of frosting. This will make your cupcake/frosting ratio better balanced for taste, and allow your guests to fit their mouths over the cupcake to more easily take a bite.</p>
<p style="text-align: left;">And now for the fancy Chocolate topper!</p>
<p style="text-align: left;">This part is so fun and it opens up a whole new world of possibilities in cake and cupcake decorating.</p>
<p style="text-align: left;">Here&#8217;s what you need.</p>
<p style="text-align: center;"><img class="alignnone" title="Candy Kote" src="http://farm5.static.flickr.com/4044/4218923587_1084bc0704_o.jpg" alt="" width="302" height="500" /></p>
<p style="text-align: left;">This Candy Kote by CK is like hard but melt-able chocolate in a tube that makes it easy to write with. I found mine at a local Cake Supply store, and there are many places that sell it online.</p>

<p style="text-align: left;">Place your candy tubes in hot water to melt them. To make toppers for eighteen cupcakes I recommend purchasing at least four tubes.</p>

<p style="text-align: left;">If you&#8217;re not comfortable creating your toppers free hand, you can create and print your designs on a simple piece of paper from your computer.</p>
<p style="text-align: left;">Then place your sheet of designs on a flat surface and cover it with a piece of parchment paper.</p>
<p style="text-align: center; "><img class="aligncenter" title="Chocolate Designs" src="http://farm3.static.flickr.com/2804/4219138227_b29341979a_o.jpg" alt="" width="500" height="335" /></p>
<p style="text-align: left;">Use your tube of melted Candy Kote just like a pen and trace your designs. Make sure to allow a thick enough flow of candy to come out in order to create a strong piece that can stand up once dried.</p>
<p style="text-align: left;">Double check to make sure that each letter or number in each topper is connected to create one fused piece, and draw a stem on the bottom of your design to create a type of stake to stick into your frosting.</p>
<p style="text-align: left;">Allow your candy toppers to dry for at least 20 minutes to ensure their strength and ability to stand up on cupcakes.</p>
<p style="text-align: left;">Gently peel your candy piece from the wax paper and lightly press it&#8217;s stem into the cupcake frosting and&#8230;</p>

<h1><em><span style="color: #993300;">Here&#8217;s What You Need&#8230;</span></em></h1>
<p><span style="text-decoration: underline;">Almond Champagne Cupcakes</span></p>
<p><strong>Bowl 1</strong></p>
<p>1 stick – 8 tbsp – unsalted butter, softened</p>
<p>3 ½ ounces almond paste (baking supply store)</p>
<p>½ cup white sugar</p>
<p>½ cup brown sugar</p>
<p><strong>Bowl 2</strong></p>
<p>3 large eggs</p>
<p>2 ½ tsp baking soda</p>
<p>1 cup whole milk</p>
<p>1 tsp Vanilla</p>
<p><strong>Bowl 3</strong></p>
<p>2 cups all-purpose flour</p>
<p>¼ salt</p>
<p>¼ tsp cinnamon</p>
<p>¼ tsp allspice</p>
<p>¼ tsp cloves</p>
<p>½ tsp cocoa powder</p>
<p>(These spices are all optional… you can create your own mixture of your favorite and available spices. Just keep them to a minimum so as not to overpower the almond flavor.)</p>
<p>18 Silver and Gold Cupcake Papers</p>
<p><span style="text-decoration: underline;">For Almond Champagne Buttercreme and Decoration</span></p>
<p>2 Containers – 32 oz. – Marshmallow Fluff</p>
<p>5 sticks UNSALTED butter – This is crucial!!! Must be unsalted or your frosting will taste like greasy, salty, butter.</p>
<p>1 tsp Vanilla extract</p>
<p>1 cup Powdered Sugar (plus more if needed to thicken)</p>
<p>1 cup <strong><a title="Shop Wilson Creek" href="http://www.wilsoncreekwinery.com/Business-Directory/Default.aspx" target="_blank">Wilson Creek Almond Champagne</a></strong></p>
<p>2 Bags Thin sliced Almonds</p>
<p>Clear decorative Sprinkling Sugar (baking supply store)</p>
<p>Dark Brown CK Candy Kote (baking supply store)</p>
<p>Clear parchment paper for baking</p>
<p><span style="text-decoration: underline;">Baking Instructions</span></p>
<p>Preheat oven to 350 degrees. Line 18 muffin cups with paper liners. In stand mixer bowl whip together almond paste, butter, brown sugar, and white sugar until fluffy. In separate bowl, combine eggs, milk, Vanilla, and baking powder. In third bowl, whisk together flour, spices, and salt. Alternate adding egg mixture and flour mixture to sugar and butter mixture just until completely combined. Do not over-mix. Spoon batter into plastic sandwich bag, cut off tip of bag, and pipe batter into paper cupcake liners until each is 2/3 full. Bake 15 to 20 minutes until toothpick comes out clean. Remove cupcakes from pan and allow to cool completely.</p>
<p><span style="text-decoration: underline;"> Almond Champagne Buttercreme</span></p>
<p>Cut sticks of room temperature butter into tablespoon size slices and set aside. Scoop two jars of Marshmallow Fluff into Stand Mixer Bowl and begin to mix on medium speed. Pop open new bottle of Wilson Creek Almond Champagne and measure 1 cup. Add Champagne to Marshmallow Fluff and continue mixing until combined. Stop mixer and scrape sides of bowl to retrieve all of the marshmallow fluff and combine with Champagne. Continue mixing.  Pour in Vanilla. Gradually add in slices of butter while beating well to combine each addition. Continue until all butter has been added and mixture is smooth. Scrape bowl again and continue mixing while adding Powdered Sugar until all is well combined. Add extra sugar if needed to adjust texture. Frosting should be soft and creamy but able to hold a shape for decoration on cupcake.</p>
<p>Using butter knife or frosting spreader, cover each cupcake with thin layer of buttercreme. Choosing well shaped Almond slices, place each piece of Almond into buttercreme on edge of cupcake, in a single row, creating a flower petal appearance all the way around cupcake.</p>
<p>Spoon rest of frosting into piping bag or tube with star shaped tip. Pipe one full spiral of frosting onto top of cupcake until covered. (it is not recommended to pipe on more frosting than this to create a cone shape appearance on top of cupcakes like seen in picture. This much frosting looks pretty, but is too much frosting for eating when serving to guests.)</p>
<p>Lightly sprinkle frosting with decorative sugar.</p>
<p><span style="text-decoration: underline;">Decorative Candy Cupcake Topper</span></p>
<p>Place liquid candy tube in hot water to soften. On computer select desired font, size, and word content for cupcake topper. Place several copies of text on word document and print on a regular sheet of paper. Place page of text on flat surface and cover with clear parchment paper. Using liquid candy, pipe and trace over text on parchment paper. Make sure all letters or numbers are attached to one another creating one single cupcake topper. After text is completed, pipe on a thick attached stem to bottom of text creating a type of stake to insert candy text into cupcake frosting. Allow candy pieces to dry completely, about 20 minutes.</p>
<p>Gently remove candy text from parchment and delicately press into frosting on cupcake.</p>

<p>Tomorrow is Christmas Eve. We&#8217;re done with all of our baking, but I&#8217;m still working on editing and uploading the pictures of all of our Christmas Cookies.</p>
<p>I thought I&#8217;d wet your appetite by giving you a glimpse of my Cupcakes I&#8217;ve entered into the &#8220;Hello, Cupcake&#8221; Challenge on Facebook.</p>
<p><strong><a title="A Cupcake Book of Brilliance" href="http://www.mommytopics.com/food/cupcakes/a-cupcake-book-of-brilliance" target="_blank"><span style="color: #993300;">&#8220;Hello, Cupcake&#8221;</span></a></strong> is my most favorite cupcake book. I&#8217;ve talked about it plenty on this blog and made a few of their designs. I thought I would forever be copying their ideas until they challenged me to come up with one of my own.</p>
<p>&#8220;What&#8217;s New Cupcake?&#8221; is the new book being released in April 2010, created by the same authors as &#8220;Hello Cupcake.&#8221; In honor of their new book they are holding a cupcake contest on Facebook&#8230; Here are the details:</p>

<p>So here&#8217;s what I came up with&#8230;</p>

<p>It&#8217;s the Big Guy Himself. Santa!</p>
<p>His eyes and hat pom-pom are made from mini marshmallows. Everything else is cupcake and frosting.</p>

<p>&#8220;Santa&#8217;s my uncle??!!!</p>
<p>&#8220;No trans fat&#8221; doesn&#8217;t truly mean, NO trans fat???!!!</p>

<p>And I like to try and stick to that rule from Bambi about how, &#8220;If you can&#8217;t say something nice, don&#8217;t say anything at all,&#8221; so&#8230; we&#8217;ll move on.</p>

<p>And last but not least, a reindeer who needs no introductions, the guiding light to Santa&#8217;s sleigh even on the foggiest of nights&#8230;.</p>

<p>I mean&#8230; Rudolph. Rudolph!</p>
<p>Sorry about that buddy. Honest mistake. No hard feelings I hope.</p>
<p>Rudolph&#8217;s antlers are made from gummy bears covered in frosting and stuck on toothpicks, inserted into the cupcake. They are also adorned with mini M&amp;Ms.</p>

<p>And that&#8217;s the crew.</p>
<p>Things really slow down for them come December 26th so they are super excited about being involved in a cupcake contest.</p>
<p>I didn&#8217;t use any Cookie Wafers or Jelly Beans&#8230; I hope that&#8217;s okay.</p>

<p style="text-align: left; ">It&#8217;s the perfect festive Cupcake for these pretty little Ornaments.</p>

<p style="text-align: left; ">And pipe your batter into your cupcake papers.</p>
<p style="text-align: left; ">I&#8217;ve found this to be the best method for getting equal portions into each cup, and avoiding a mess&#8230; well&#8230; almost.</p>

<p style="text-align: left; ">Just look at these gorgeous little things!</p>

<p style="text-align: left; ">The next step is to frost each cupcake with an even smooth layer, using a butter knife, and then roll the tops in bowls of colored sprinkling sugar.</p>
<p style="text-align: left; ">If you want to get really fancy you can make different color frostings to match your sprinkles.</p>
<p style="text-align: left; ">I didn&#8217;t have any food coloring on hand, so I just used white frosting for all of mine.</p>
<p style="text-align: left; ">Store bought frosting, Homemade frosting, Creme Cheese frosting, Butter-creme Frosting, &#8230;. pretty much any thick, white, frosting will do.</p>

<p style="text-align: left; ">What these cupcakes absolutely require, is a great candy supply for decorating.</p>
<p style="text-align: left; ">I bought my sprinkles and dragees (the shiny ball sprinkles) at a JoAnne&#8217;s Fabrics and Craft Store.</p>

<p style="text-align: left; ">The other great place to get AWESOME decorating candy for Cookies, Gingerbread Houses, and Cupcakes, is at your mall Candy Store.</p>
<p style="text-align: left; ">You know&#8230; the one with all the bins you can scoop from.</p>
<p style="text-align: left; ">It&#8217;s so convenient to be able to dish out just the perfect amount for your project.</p>
<p style="text-align: left; ">Staring at all those bins of goodies is sure to spark all kinds of new decorating ideas.</p>
<p style="text-align: left; ">What you absolutely must have for these cupcakes are:</p>
<p style="text-align: left; ">Mini M&amp;M&#8217;s</p>
<p style="text-align: left; ">Smooth thin Licorice Rope in black and red (other colors too if you can find it)</p>
<p style="text-align: left; ">Spice drops</p>

<p style="text-align: left; ">Have you seen these before?</p>
<p style="text-align: left; ">These are chocolate and candy coated Sunflower Seeds. Basically Sunflower Seed M&amp;M&#8217;s&#8230; but not made by the M&amp;M company.</p>
<p style="text-align: left; ">These are also available at some mall candy stores&#8230; That&#8217;s where I got mine.</p>
<p style="text-align: left; ">I love these for decorating Christmas treats because they are shaped just like Christmas lights. They look adorable on Christmas tree cookies, lining the roofs of Gingerbread houses, and on these Ornament Cupcakes.</p>

<p style="text-align: left; ">Here are your ingredients for making the Cupcake Ornament Toppers.</p>
<p style="text-align: left; ">Spice Drops, Black Licorice Rope, and Pretzels.</p>

<p style="text-align: left; ">Poke a hole in the rounded top of a spice drop using a toothpick.</p>
<p style="text-align: left; ">Insert the pretzel.</p>
<p style="text-align: left; ">Make two more holes; one on each side of the top of the spice drop, with a toothpick.</p>
<p style="text-align: left; ">Cut a small piece of black licorice rope, and insert it into the top holes so that it forms a rounded loop.</p>

<p style="text-align: left; ">The pretzels allow you to insert the toppers into the cupcake and make them stick in place just where you want them to.</p>
<p style="text-align: left; ">I ended up breaking my pretzel sticks in half so they didn&#8217;t poke out the bottom of the cake.</p>

<p style="text-align: left; ">Next you need some good ol&#8217; Fruit by the Foot.</p>
<p style="text-align: left; ">These red ones were already cut in perfect ornament, decorating, shapes.</p>
<p style="text-align: left; ">You can also use Starburst Chews for this and just flatten them out with a rolling pin.</p>

<p style="text-align: left; ">The blue Fruit by the Foot was not already cut into shapes.</p>
<p style="text-align: left; ">This nifty little Fondant Cutter that I found at the craft store came in handy for making elaborate edges.</p>
<p style="text-align: left; ">You can also use fancy edged scrapbooking scissors, or if you&#8217;re really talented&#8230; a sharp kitchen knife and your own imagination.</p>

<p style="text-align: left; ">Just cut some fun and frilly shapes to put on your cupcakes.</p>

<p style="text-align: left; ">When you make (or buy) your frosting, set some aside in a Sandwich Bag. This will be the glue that holds all your decorations onto your sugar coated cupcakes.</p>

<p style="text-align: left; ">Using your spice drop tops, bag of gluing frosting, candy, and Fruit Snack strips&#8230; start decorating.</p>

<p style="text-align: left; ">This is a cute little Turkey Cupcake with a Cookie place-card. He is sure to make Thanksgiving special for all of your guests this year if you are willing to take the time to make him.</p>
<p style="text-align: left; ">The inspiration for him came from my <strong><a title="Cupcake Book of Brilliance" href="http://www.mommytopics.com/food/cupcakes/a-cupcake-book-of-brilliance" target="_blank"><span style="color: #008080;">Cupcake Book of Brilliance</span></a></strong> which I&#8217;ve mentioned before. I changed some of the design and ingredients, and learned some helpful tips that weren&#8217;t in the book.</p>

<p style="text-align: left; ">I&#8217;m really more of a cake <em>decorator</em>, than a cake <em>baker</em>. I&#8217;m always so anxious to get to the decorating part, that I rarely have the patience to bake from scratch. Kind of that <em>Semi</em>-Homemade approach.</p>
<p style="text-align: left; ">For these cute little Turkey cupcakes, I chose a boxed Spice Cake mix and a pre-made Coconut Pecan frosting&#8230; you know&#8230;the kind that you only see on top of German Chocolate Cake?</p>
<p style="text-align: left; ">I&#8217;m not quite sure why everyone reserves this stuff for German Chocolate Cake only.  It&#8217;s so delicious!</p>
<p style="text-align: left; ">It should be included in all kinds of recipes.</p>
<p style="text-align: left; ">Hey, there&#8217;s a thought&#8230; See how many new and amazing desserts you can come up with using Coconut Pecan Frosting. Imagine it on top of a Lemon Cake, Carrot Cake&#8230; Brownies&#8230; Mmmmmmmmm.</p>
<p style="text-align: left; ">Ok.. let&#8217;s get back to the Turkeys.</p>

<p style="text-align: left; ">Each turkey needs one Large cupcake, and one Mini cupcake. A standard cupcake is the size in between these two, and not a size used in this recipe. Set your regular cupcake pan aside and go for Large and Mini. One box of mix and just less than two tubs of frosting will make twelve turkeys.  That&#8217;s twelve Large cupcakes and twelve Mini cupcakes altogether.</p>

<p style="text-align: left; ">A shopping list of all the ingredients you&#8217;ll need is included at the bottom of this post. So put away your pencils and just enjoy the step by step journey from plain sad little muffin to Thanksgiving Turkey Cupcake Show-Stopper.</p>

<p style="text-align: left; ">After the cupcakes are baked and completely cooled it&#8217;s time to frost ALL OF THEM!</p>

<p style="text-align: left; ">My recommendation is that you begin these decorating steps at least two days prior to Thanksgiving.</p>
<p style="text-align: left; ">Because these cupcakes are going to sit out on display as place markers or a centerpiece for your feast, they need a couple of days to set up, so as not to slide into an oozy mess on your Dining Table. More about that sad, sad story in a bit.</p>
<p style="text-align: left; ">And don&#8217;t worry&#8230; these decorated cupcakes taste even better after a couple of days than they do after they&#8217;re fist made. Just that little bit of time seems to give the flavors a chance to develop, mingle, and marry into something TOTALLY YUMMY!</p>

<p style="text-align: left; ">The last step to do on the Large cupcakes, prior to Thanksgiving day, is to roll their edges in chocolate sprinkles.</p>

<p style="text-align: left; ">Now it&#8217;s on to the Turkey faces. Take one single Candy Corn and press it into a Mini cupcake as the beak. Instead of pressing it right into the center of the cake, scoot it closer to the edge, making that the bottom part of the Turkey head.</p>

<p style="text-align: left; ">The next thing you need is a good ol&#8217; lunch snack to make your gizzard.</p>

<p style="text-align: left; ">The Fruit by the Foot packs I found came already sliced into three strands.  All I had to do was use a sharp knife to round the bottoms and cut the gizzards to size. When cutting the gizzards, it&#8217;s best to cut them at an angle. The pointed, angled tip that is created, is easier to discretely wrap up around the beak, than a blunt square end.</p>

<p style="text-align: left; ">The gizzards should be long enough to slightly hang down past the bottom of your Mini cupcakes.</p>
<p style="text-align: left; ">This little guy is really starting to look like a Turkey.</p>

<p style="text-align: left; ">In addition to the two tubs of Coconut Pecan Frosting, you&#8217;ll also need one tub of dark chocolate frosting.  You won&#8217;t use the whole tub.  In fact I didn&#8217;t even use the entire bag worth shown in this picture.</p>
<p style="text-align: left; ">Not only is this chocolate frosting used on your eyes and place cards, it is also the unseen glue that holds many of your pieces together. More about that later.</p>

<p style="text-align: left; ">Using your piping bag of Dark Chocolate frosting, pipe on two little eyes. Don&#8217;t worry if you have a hard time getting your eyes flat. When using a piping bag you&#8217;ll end up having an unavoidable spike of frosting where the dollop doesn&#8217;t want to let go of the frosting in the bag. Just dip the tip of your finger under a water faucet and shake the excess water off. Dab your barely wet finger gently onto the little frosting eye, and then that rebellious frosting spike will smooth right out.</p>
<p style="text-align: left; ">Now this Turkey face looks pretty good, but just a little bit soul-less don&#8217;t you think?</p>

<p style="text-align: left; ">That&#8217;s where these come in. Just your every day little tiny ball-shaped sprinkles. Their official name is Nonpareils.  You can find them in any grocery store baking aisle if you don&#8217;t already have some in your cupboards.</p>

<p style="text-align: left; ">Pour a few out into a bowl. You&#8217;re only going to use the white ones. Press your barely wet, now slightly sticky, eye smoothing finger onto a white sprinkle to pick it up, and then place it off center in a turkey eye.</p>

<p style="text-align: left; ">There&#8217;s that turkey soul!</p>
<p style="text-align: left; ">The wonder. The sparkle. The life. The aspirations to grow up and become Thanksgiving Dinner&#8230; or in this case&#8230; Desert!</p>
<p style="text-align: left; ">It&#8217;s best if you place the white sprinkles off to one side, and make it the same side on each eye. Otherwise you&#8217;ll end up with a cross-eyed Turkey. Then again&#8230; if it&#8217;s the Turkey which will boast the Place-Card name &#8220;Uncle&#8221;, <em>cross-eyed</em> and <em>crazy</em> might be Just Right!</p>

<p style="text-align: left; ">The last step in creating your cute little Turkey heads is to place on the hair&#8230; or probably what should really be called the Head Feathers.</p>
<p style="text-align: left; ">You can just lay a few sprinkles on there in a pile, but they tend to all fall down flat. I prefer to search for the longest sprinkles I can find in the tub, and place each one individually into the frosting, standing on end.</p>
<p style="text-align: left; ">It just looks so cute that way.</p>
<p style="text-align: left; ">Changing the position of the white sprinkles in the eyes, and the amount and placement of the sprinkles for hair, will give each of your Turkeys a bit of their own character.</p>

<p style="text-align: left; ">Repeat the above steps until you have twelve Turkey bodies and twelve Turkey heads, or however many you&#8217;re going to need for your Turkey Day Feast.</p>
<p style="text-align: left; ">My advice at this point is to keep all of the decorated heads and bodies disassembled.  Both the Mini and the Large decorated cupcakes should be placed in covered Tupperware containers and stored in a cool dry place where they won&#8217;t be bothered for at least two days.</p>

<p style="text-align: left; ">Here is a Turkey that did <em>NOT</em> sit for two days.</p>
<p style="text-align: left; ">I made this little guy (and a few others) only one hour prior to taking this picture.</p>
<p style="text-align: left; ">This is not the site you want your guests stumbling upon as they show up for Thanksgiving Dinner!</p>

<p style="text-align: left; ">Can you imagine?!</p>
<p style="text-align: left; ">You set your perfect looking Turkey cupcakes out on the table with PRIDE, and head back to the kitchen to mash the mashed potatoes, finish the vegetable plate, and put the <strong>punch</strong> together. Your guests begin to arrive and after you&#8217;ve greeted them and subliminally encouraged them in towards the BEAUTIFUL dining room table where your Turkey Cupcakes are, you head back to the kitchen and wait for the ooohs and ahhhhs to start pouring in.</p>
<p style="text-align: left; ">But&#8230; before you hear any shrieks of glee as family members discover their names ever so cleverly placed next to an adorable little cupcake that looks like a Turkey, you feel a tiny little tug on the back of your pant leg, and you know right away who it is.</p>
<p style="text-align: left; ">It&#8217;s your three year old.</p>
<p style="text-align: left; ">&#8220;Mommy, why are your Turkeys so sad? What&#8217;s wrong with them Mommy? What happened to them?&#8221;</p>
<p style="text-align: left; ">You pause, alarmed, but hopeful. Hopeful that this is just one of those moments when your child has interpreted something very, <em>very</em> wrong.</p>
<p style="text-align: left; ">But then you hear it&#8230; Hollering from the other room your loudmouth younger brother (who supposedly is now an adult according to his number of years on the planet, but still, nobody is buying it) yells out,</p>
<p style="text-align: left; ">&#8220;Hey sis&#8230; what&#8217;s this thing out here, dying next to my name? Do you expect me to look at this while I try and eat Thanksgiving Dinner? Somebody get a paper towel.&#8221;</p>

<p style="text-align: left; ">No no. This is not how any of us wants our Thanksgiving to go.</p>
<p style="text-align: left; ">Now, many bakers and cupcake makers only show you their best work and may try to appear as though their skills are immaculate. Here at MommyTopics.com I am 100% committed to keeping it real, and in every area of life&#8230; often&#8230; things go very wrong.</p>
<p style="text-align: left; ">But there is hope.</p>
<p style="text-align: left; ">This experience taught me what to do, and what not to do, and now I can share both with you!</p>

<p style="text-align: left; ">See these three little Turkeys?</p>
<p style="text-align: left; ">The ones on the right and on the left that are melting and falling apart were made from start to finish on the day these photos were taken. The little guy in the middle was part of the practice batch I made two days prior to these photos being taken.  When I made that Turkey with the uncle sign, I made his head and body and did not attach them.  I let them sit in covered Tupperware as two separate pieces for two days. This allowed time for all the frosting to set and he also tasted better than the other two melty Turkeys.</p>

<p style="text-align: left; ">So, my advice is to make all the heads and all the bodies, and then put them away for two days sitting just like this in containers.</p>
<p style="text-align: left; ">I didn&#8217;t try refrigerating any of these, but I wouldn&#8217;t recommend trying it. I&#8217;d be nervous about the frosting drying out so much that it starts to crack and discolor. Cupcakes do just fine left out on counters or put away in cupboards as long as they are kept covered, cool, and dry.</p>

<p style="text-align: left; ">On Thanksgiving morning it&#8217;s time to make your name cards. Making these early causes them to soften and lose their crispiness. They still look ok two days later, but they are not much fun to bite into. Making them the morning of is a good thing anyway because you often don&#8217;t know exactly who all is coming until the last minute.</p>

<p style="text-align: left; ">You could leave a few extra cookies out in the kitchen to quickly write new names on as unexpected guests arrive.</p>
<p style="text-align: left; ">Or, you could just make some extra Place-cards that say, &#8220;Turkey&#8221;. Wouldn&#8217;t that be a fitting title for those who show up unannounced.</p>

<p style="text-align: left; ">All you do to make these sweet little cookie Place-Cards is use the same bag of Dark chocolate icing that you used for the eyes, and in your best handwriting pipe away!</p>
<p style="text-align: left; ">You could practice first on a paper towel or parchment paper until you get the hang of it. You&#8217;ll also have plenty of extra cookies in the box for mess ups.</p>

<p style="text-align: left; ">On Thanksgiving morning, you&#8217;ll also want to make your cookie tails. You absolutely cannot make these in advance because after two days they become so soggy they won&#8217;t stand up on your turkeys. They will just crumble when you try to pick them up.</p>

<p style="text-align: left; ">Here is something new that I learned.</p>
<p style="text-align: left; ">Did you know that there is something called Indian Corn? I had never noticed it before.</p>

<p style="text-align: left; ">There is of course the Candy Corn we&#8217;re all used too, but I had never seen Indian Corn before, which is almost the same thing except that it&#8217;s bottom stripe is brown and tastes like Chocolate. You definitely want to use regular candy corn for your beak and feet, but the Indian Corn adds some great color and taste to your Turkey tails.</p>

<p style="text-align: left; ">Lay out the Ginger Thins, and don&#8217;t worry if some of the edges are a bit crumbled. Those minor defects can be covered up by the candy or hidden on the side that is pressed into the cupcake.</p>

<p style="text-align: left; ">From now on, your chocolate icing is going to be your glue that holds everything together.</p>

<p style="text-align: left; ">I found that the Candy Corn and Indian Corn fit best onto the cookies if placed in a pattern of: middle of hump, between two humps, middle of hump, between two humps, middle of hump, between two humps&#8230; and that&#8217;s it. Just five pieces to each cookie, and the bottom half left bare, to press into the cupcake.</p>

<p style="text-align: left; ">Come on, admit it. You had no idea there were giant Marshmallows hidden on these Turkeys.</p>
<p style="text-align: left; ">The Marshmallows are what are going to prop up your Turkey tails.</p>

<p style="text-align: left; ">Use a sharp knife to cut them in half diagonally.</p>

<p style="text-align: left; ">Apply some of your Chocolate frosting to the round flat top of the Marshmallow.</p>

<p style="text-align: left; ">Press a tail gently down into the cupcake and then gently back against the chocolate icing on the Marshmallow, to secure it in place. It shouldn&#8217;t stand strait up, but rather should rest at an angle.</p>

<p style="text-align: left; ">Now, apply some more of your Chocolate frosting like a half moon on the base of your Turkey Tail.</p>

<p style="text-align: left; ">Choose a cute little Turkey head, and press it gently at an angle down into your cupcake, and against the Chocolate icing on the tail to secure it in place.</p>

<p>- 1 box Spice Cake Mix</p>
<p>- Large Cupcake Pan</p>
<p>- Mini Cupcake Pan</p>
<p>- 12 Large White Cupcake papers</p>
<p>- 12 Mini White Cupcake papers</p>
<p>- 2 tubs Coconut Pecan Frosting</p>
<p>- 1 tub Dark Chocolate Frosting</p>
<p>- Piping Bag or Sandwich Bag for Icing</p>
<p>- 1 Bag Candy Corn</p>
<p>- 1 Bag Indian Corn</p>
<p>- 1 Tub Chocolate Sprinkles</p>
<p>- 1 Jar Nonpareils</p>
<p>- 1 roll of red Fruit by the Foot</p>
<p>- 1 box Almond Thins</p>
<p>- 1 box Anna&#8217;s Ginger Thins</p>
<p>- 6 standard size Marshmallows</p>
<p>Makes 12 Turkeys</p>
<p>And if you&#8217;ve never purchased some of these ingredients before, and are wondering where to get them, and would rather not drive from store to store finding a couple items here and a couple items there&#8230;</p>
<p>I purchased every one of these ingredients at Wal-Mart.</p>
<h1><em>Timing of Assembly for Best Results&#8230;</em></h1>
<h3>Day One:</h3>
<p>Bake cupcakes and allow to cool completely.</p>
<p>Frost bodies and roll edges in Chocolate Sprinkles.</p>
<p>Frost faces and assemble all face details.</p>
<p>Set Large and Mini cupcakes aside in cool dry place, covered for two days.</p>
<h3>Thanksgiving Morning:</h3>
<p>Create Name Place-Cards and Tails.</p>
<p>Set aside in cool dry place and allow to dry and set up.</p>
<h3>Before Guests Arrive:</h3>
<p>Assemble Turkeys and place for display.</p>

<p style="text-align: left; ">I received this book for Mother&#8217;s Day this year and I am just in love with it.  My kids love it too.  You can tell by the bent lower corner that it has gotten some use.  I often can&#8217;t find this book when I need it because my kids have wandered off with it just to sit and look at the pictures.</p>

<p style="text-align: left; ">Inside there are more than a dozen cupcake and frosting recipes, but the point of the book is really the imaginative designs and decorations.  Just look at all the fun candies they show you how to cut and shape into amazing details on cupcakes.</p>

<p style="text-align: left; ">Now here is where the book becomes amazing. Each page is filled with the most impressive, whimsical, lovely cupcake designs you have ever seen.  Just look at this garden.  Wouldn&#8217;t it be fun to set up a kid&#8217;s Beatrix Potter book night with some friends and then eat these chocolate, Oreo cookie crumb topped treats?  They could be called, &#8220;Mr. McGregor&#8217;s Cupcakes.&#8221;</p>
<p style="text-align: left; ">The radishes are red M&amp;Ms with white chocolate points.  The Peas are green M&amp;Ms tucked inside flattened, shaped, green Starbursts.  The carrots are molded orange Starbursts.  (I&#8217;m starting to sound like Willy Wonka here!) The little cabbages are&#8230; well&#8230; I guess you&#8217;re just going to have to buy the book to find out!  All of the instructions and supplies you need are included in the book.</p>

<p><span style="color: #008080;"><span style="color: #000000;">Now look at this one.  There is no way these even look like cupcakes.  Those mashed potatoes are frosting covered with caramel and a yellow Starburst masquerading as butter.  The peas are green skittles and the carrots are orange Starburst chunks.  The drumsticks are built up cupcakes, frosted and coated in grahm cracker crumbs and topped off with white chocolate molded like a bone.  I think this would be a huge hit at one of those &#8220;Ugly Christmas Sweater Parties.&#8221;</span></span></p>

<p style="text-align: left; ">And this is one of my personal favorites.  I can&#8217;t wait to make this one next Spring.  I just think it is ADORABLE!  Some of the cupcakes are decorated as little patches of grass with Robin Egg Candies on top.  And then you decorate a handful of cupcakes like bunny bums with their feet and tails in the air.  I love it!</p>
<p style="text-align: left; ">I told you! The makers of this book are some very talented and imaginative people.  There are so many more cute ideas in this book but I don&#8217;t want to post them all here now.  That would take the fun out of discovering them for yourself if you choose to buy the book.  I also plan to make plenty of them in the future and would love to share them with you then.</p>

<p style="text-align: left; ">This yummy little item is called a Watermelon Fruit Streamer and it is made by Kellogg.  I&#8217;ve bought these for my kids in the past, but of course now that I truly need them I can&#8217;t find them anywhere.  I looked for them at Wal-Mart, Vons, Albertsons, Winco, Target, and CVS.  I really hope Kellogg&#8217;s hasn&#8217;t discontinued them.  I&#8217;m going to need them for some Christmas cupcakes.  If you happen to see them at a store near you&#8230; PLEASE let me know!</p>
